The rooms are thoughtfully designed after the traditional “Kaishoba,” where brewers once rested.
Surrounded by artworks from literary figures who visited Nishiyama Sake Brewery, the rooms offer panoramic views of the entire brewery.
Guests may also hear the gentle sounds of steaming rice and the voices of the brewers, creating a truly authentic brewery experience.
Guests can enjoy a guided tour of the historic brewery exterior, as well as a tour of Koden and the gallery, which features artworks and brewery history.
Hands-on workshops are also available, such as making amazake or fermented seasonings.
Dinner
Guests may choose to add a local specialty hot pot dinner featuring Tamba free-range chicken and seasonal vegetables simmered in Kotsuzumi sake when making their reservation.
As the meal progresses, cheese and our house-made sake lees miso are added to deepen and evolve the flavor for a rich and satisfying experience.

For an additional fee, you can upgrade to our premium full-course dinner. This exclusive experience features dishes crafted from fresh organic vegetables, local free-range chicken, and fermented foods sourced within just a few kilometers of our brewery, paired with seven meticulously selected seasonal sake varieties, served as a thoughtfully curated course.
From the appetizer to the dessert, each pairing is presented on Tamba ware and in vessels once used to host the renowned haiku poet Kyoshi Takahama, enhancing the sake’s depth of flavor and character. This is perfect for food enthusiasts who wish to savor the very best of Tamba.

・You will move between warm rooms (around 40°C) and cold rooms (around 7°C), so we recommend wearing layers that are easy to put on and take off.
・Clothing with sequins, beads, or decorative elements is not allowed, as they may fall into the brewing equipment.
・Accessories and watches should be removed, or gloves may be required.
・Please refrain from wearing makeup, strong-scented hair products, or perfumes.
